I LOVE THIS VEGGIE! My kids and my dad, not so much. I am determined to use it more, b/c it is so good for you, and I am watching the carbs I eat. HAHAHA! Anyhow, this recipe was for chicken and sun-dried tomato spaghetti squash! YUMMY! I roasted it, cut side down, for 1 hour at a 350 degree oven! Delicious! I scrapped it with a fork to get all the strands out. Wait for it to cool...I didn't, and got a good burn on my finger. Definitely give it a try!

I think next time I make this I will do something simpler Perhaps, meat sauce over it. I might also try putting chili over it! It is really a versatile food item! and it has a sweet taste, so it can truly go with anything!
